REVENUE FROM PATE BERRICHON

Ingredients: (for 6 pers) 

  - Foiled paste: 500 g.
  - Veal: 500 g.
  - Pork (fat breast): 500 g.
  - hard eggs.
  - Salt, pepper.

Preparation:

Chop meat, salt, pepper.
Spread the dough in a large rectangle.
Garnish with the stuffing and the halves of hard eggs, round side on top.
Cover with another rectangle a little less long and a little less wide.
Fold the sides after humidifying them with water to close the pâté well.

Make small slits between the eggs to allow the steam to escape during cooking.
Dorm with egg and bake in medium oven for about 1 hour.

Serve the pâté just cold.

CHAVIGNOL'S TOURT IN THE CROTTIN
Ingredients: (for 6 pers) 
   
for broken dough:
  - 300 g of flour
  - 1 pinch of salt
  - 150 g butter
  - 1 egg
  - 1 tablespoon oil
  - 1/2 glass of water
For filling:
  - 2 whole eggs
  - 3 dried Chavignol rinds at point
  - 200 g of fresh cream
  - salt, mill pepper
  - 1 egg yolk to brown
   

Preparation:

Preparation of the dough. Mix all the ingredients and knead with your fingertips. Let stand for 1 hour. Spread with the roll and roll a mould 25 cm in diameter. Cut the dough around the mould and let it overflow a little.

The garnish. Beat the 2 eggs, the fresh cream and the 3 previously grated Chavignol crottins in a jatte, salt lightly and pepper. Put this device in your mould. Cover with the rest of the dough. Border all around the mould. Dore with the egg yolk. Cook 1 hour in medium oven. Tasting at the outlet of the oven.

"VIAU" TO THE RED SANTER
Ingredients: (for 6 pers) 
   
  - 1 kg of veal shank cut into large cubes
  - 300 g of bacon
  - 4 onions
  - 3 tablespoons of oil
  - 75 g of butter
  - 1 bouquet garnished (persil, thyme, laurel)
  - 2 cloves of garlic
  - 1 tablespoon flour
  - 1 small glass of cognac
  - big salt, pepper
  - 1 and a half bottle of red Sancerre
   

Preparation:

Blond the chopped onions in a casserole, half butter and half oil. Meanwhile, whiten the bacon in boiling water.

Remove the onions from the casserole and place the pieces of meat with the rest of the oil and butter. Colour them on all sides, stirring with the wood spoon.

Add the onions, garlic cloves, bacon and sprinkle with flour, turning to absorb the flour, add the glass of cognac and torch.

Pour the previously heated red wine, add the garnished bouquet, salt and pepper.

Cover the casserole and simmer over very low heat for 1 hour and a half.

Serve with steamed potatoes, sprinkle with chopped parsley.
